- 2 cups cottage cheese
- 1 cup blueberries (fresh or frozen)
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cottage cheese, rolled oats, honey (or maple syrup), eggs, vanilla extract, cinnamon, and salt in a mixing bowl.
- Fold in the blueberries gently.
- Transfer the mixture into individual ramekins or a baking dish.
- Bake for 25-30 minutes, or until golden and slightly set.
- Allow to cool for a few minutes before serving.
Notes
Serve warm with extra honey or maple syrup, or topped with yogurt or nuts for added texture. Leftovers can be stored in the fridge for up to 3 days.
