- 1 lb boneless, skinless chicken breasts
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 8 oz cream cheese
- 4 cups chicken broth
- 1 cup shredded cheese (optional)
- Chopped cilantro (for garnish)
- Salt and pepper to taste
Instructions
- In a large pot, combine the chicken, black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes.
- Remove the chicken from the pot and shred it using two forks.
- Return the shredded chicken to the pot and add the cream cheese. Stir until melted and well combined. Season with salt and pepper to taste. Serve hot, topped with shredded cheese and chopped cilantro.
Notes
For extra flavor, use homemade chicken broth. To lighten, substitute half of the cream cheese with Greek yogurt.
