Ingredients

  • 1/2 cup milk
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh cranberries
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • Butter or oil for cooking
  • Maple syrup for serving

Instructions

  1. In a mixing bowl, combine the ricotta cheese, milk, and eggs. Mix until smooth.
  2. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Combine wet and dry mixtures, stirring just until moistened. Fold in cranberries, orange zest, and juice.
  4. Heat a skillet over medium heat and coat with butter or oil. Pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form, flip, and brown the other side until golden. Transfer to a plate and keep warm.
