A delightful cheesecake combining rich creaminess with tart cranberries and fresh orange flavors, perfect for holidays and celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • 1 cup fresh cranberries
  • 1/2 cup water
  • 1/2 cup sugar (for cranberry sauce)

Instructions

  1. Preheat your oven to 325°F (160°C). Mix graham cracker crumbs and melted butter until combined, then press into a springform pan. Bake for 10 minutes and let cool.
  2. In a bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then stir in vanilla, orange juice, and zest until smooth.
  3. Pour cream cheese mixture over cooled crust. Bake for 50-60 minutes until the center is slightly wobbly. Cool in the oven for an hour.
  4. For the cranberry sauce, combine cranberries, water, and sugar in a saucepan. Cook until cranberries pop and sauce thickens. Let cool.
  5. Once the cheesecake has cooled, top with cranberry sauce and chill in the refrigerator for at least 4 hours before serving.

Notes

Serve chilled, optionally topped with whipped cream or vanilla ice cream. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
