Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 oz brie cheese, cut into small pieces
  • 1/2 cup cranberry sauce
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Make a pocket in each chicken breast by slicing them horizontally, taking care not to cut all the way through.
  2. Stuff each chicken breast with pieces of brie cheese and cranberry sauce, packing well.
  3. Season the outside with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear each side for 3-4 minutes until golden brown.
  4. Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through (internal temperature of 165°F).
  5. Let the chicken rest for a few minutes, garnish with fresh thyme, and serve.
