- 2 boneless, skinless chicken breasts
- 4 oz brie cheese, cut into small pieces
- 1/2 cup cranberry sauce
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 375°F (190°C). Make a pocket in each chicken breast by slicing them horizontally, taking care not to cut all the way through.
- Stuff each chicken breast with pieces of brie cheese and cranberry sauce, packing well.
- Season the outside with garlic powder, salt, and pepper. Heat olive oil in a skillet over medium heat and sear each side for 3-4 minutes until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes until cooked through (internal temperature of 165°F).
- Let the chicken rest for a few minutes, garnish with fresh thyme, and serve.
Notes
