Description

A hearty and flavorful casserole with layers of seasoned beef, beans, sweet corn, and fluffy cornbread topping, perfect for family dinners or potlucks.


Ingredients

  • 1 lb ground beef
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 cup diced tomatoes
  • 1 package cornbread mix
  • 1 cup shredded cheese
  • 1 cup milk
  • 1 egg
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef until browned, then drain excess fat.
  3. Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet; stir to combine.
  4. In a separate bowl, mix cornbread mix with milk and egg until smooth.
  5. Grease a baking dish and spread the beef mixture at the bottom; pour cornbread batter over the top.
  6. Sprinkle shredded cheese on top.
  7. Bake for 25-30 minutes until golden brown.
  8. Let cool for a few minutes before serving.

Notes

Feel free to swap ground beef for ground turkey or chicken. For a vegetarian option, replace the meat with lentils or additional beans.
