- 1 lb ground beef
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 cup diced tomatoes
- 1 package cornbread mix
- 1 cup shredded cheese
- 1 cup milk
- 1 egg
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the ground beef until browned, then drain excess fat.
- Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet; stir to combine.
- In a separate bowl, mix cornbread mix with milk and egg until smooth.
- Grease a baking dish and spread the beef mixture at the bottom; pour cornbread batter over the top.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until golden brown.
- Let cool for a few minutes before serving.
Notes
Feel free to swap ground beef for ground turkey or chicken. For a vegetarian option, replace the meat with lentils or additional beans.
