Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon melted butter or oil
  • Optional toppings (syrup, fruit, etc.)

Instructions

  1. In a mixing bowl, combine 1 cup of cottage cheese, 2 large eggs, and 1/4 cup of milk.
  2. In another bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Stir in 1 tablespoon of melted butter or oil.
  5. Preheat your waffle iron and lightly grease it.
  6. Pour the batter into the hot waffle iron and cook according to instructions.
  7. Serve warm, topped with syrup, fresh fruit, or powdered sugar.

Notes

For extra flavor, consider adding vanilla extract or cinnamon to the batter.
