Instructions
- In a mixing bowl, combine 1 cup of cottage cheese, 2 large eggs, and 1/4 cup of milk.
- In another bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in 1 tablespoon of melted butter or oil.
- Preheat your waffle iron and lightly grease it.
- Pour the batter into the hot waffle iron and cook according to instructions.
- Serve warm, topped with syrup, fresh fruit, or powdered sugar.
