- 1 cup cottage cheese
- 1 cup flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine cottage cheese, flour, sugar, vegetable oil, eggs, baking powder, baking soda, salt, and vanilla extract. Stir until just combined.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Notes
