Ingredients

  • 1 cup cottage cheese
  • 1 cup flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine cottage cheese, flour, sugar, vegetable oil, eggs, baking powder, baking soda, salt, and vanilla extract. Stir until just combined.
  3. Pour the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes or until a toothpick comes out clean.
  4. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes
