Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. Whisk together the eggs and cottage cheese in a large bowl until smooth, ensuring there are no lumps.
  3. Stir in the shredded cheese, diced bell peppers, chopped spinach, salt, and pepper until evenly combined.
  4. Pour the mixture into the muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, until set and lightly browned on top.
  5. Let them cool for a few minutes before carefully removing them from the tin.

Notes

For a creamier texture, blend the cottage cheese before mixing. Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.
