- 1 cup cottage cheese
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- Whisk together the eggs and cottage cheese in a large bowl until smooth, ensuring there are no lumps.
- Stir in the shredded cheese, diced bell peppers, chopped spinach, salt, and pepper until evenly combined.
- Pour the mixture into the muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, until set and lightly browned on top.
- Let them cool for a few minutes before carefully removing them from the tin.
Notes
For a creamier texture, blend the cottage cheese before mixing. Store in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months.
