Ingredients

  • 3 large eggs
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • Salt to taste
  • Optional herbs or spices (e.g., garlic powder, pepper)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, blend the cottage cheese, eggs, and almond flour until smooth.
  3. Add baking powder and salt to the mixture, and mix until well combined. Optionally, add herbs for flavor.
  4. Scoop the mixture onto the prepared baking sheet creating round shapes. Bake for 25-30 minutes, or until golden and set.
  5. Allow the bread to cool slightly before serving.

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
