- 2 cups broccoli florets
- 1 cup shredded carrots
- 1/2 cup chopped onion
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and shredded carrots, and cook until softened, about 4-5 minutes.
- Stir in the flour and cook for another minute to create a roux.
- Gradually add the vegetable broth, stirring constantly. Bring to a boil, then add the broccoli and simmer until tender, about 10 minutes.
- Stir in the heavy cream and shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste, and serve hot.
Notes
For a velvety soup, use an immersion blender to puree part of the soup after adding cheese. Adding proteins like shredded chicken is optional.
