Description

A warm, comforting dish that captures the flavors of the beloved restaurant version right in your own kitchen, this broccoli cheddar soup is creamy and rich with vibrant broccoli bits.


Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and shredded carrots, and cook until softened, about 4-5 minutes.
  2. Stir in the flour and cook for another minute to create a roux.
  3. Gradually add the vegetable broth, stirring constantly. Bring to a boil, then add the broccoli and simmer until tender, about 10 minutes.
  4. Stir in the heavy cream and shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste, and serve hot.

Notes

For a velvety soup, use an immersion blender to puree part of the soup after adding cheese. Adding proteins like shredded chicken is optional.
