Decadent brownies blended with creamy cheesecake and crunchy chocolate sandwich cookies.
Ingredients

- 1 cup unsalted butter
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ teaspoon salt
- 8 oz cream cheese (softened)
- ½ cup powdered sugar
- 1 teaspoon vanilla extract (for cheesecake layer)
- 12 chocolate sandwich cookies (roughly crushed)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- Melt the butter in a saucepan over low heat. Stir in granulated sugar and cocoa powder until smooth.
- Remove from heat and add eggs one at a time, whisking well after each. Stir in vanilla extract.
- Fold in flour and salt until just combined.
- In a separate bowl, beat cream cheese with powdered sugar and vanilla extract until smooth.
- Pour half of brownie batter into the prepared baking dish, spreading evenly. Drop spoonfuls of cheesecake mixture over brownie layer and sprinkle with crushed cookies.
- Top with remaining brownie batter and create swirls with a knife.
- Bake for 30-35 minutes or until a toothpick inserted comes out with a few moist crumbs. Cool completely before slicing.
Notes
Serve warm or at room temperature. Great with vanilla ice cream or drizzled with chocolate sauce. Store leftovers in an airtight container for up to 3 days, or refrigerate for up to a week.
