Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup brown sugar (for crumble)
  • 1 tsp cinnamon (for crumble)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing thoroughly after each.
  4. Stir in the milk and vanilla extract until well combined.
  5. Whisk together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Mix the brown sugar and cinnamon for the crumble in a small bowl.
  8. Pour half of the batter into muffin tins, sprinkle with crumble, add the remaining batter, and top with more crumble.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
  10. Let cool slightly before transferring to a wire rack.

Notes

For extra flavor, consider adding nuts or a glaze on top of the muffins.
