- 1/4 cup brown sugar (for crumble)
- 1 tsp cinnamon (for crumble)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing thoroughly after each.
- Stir in the milk and vanilla extract until well combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Mix the brown sugar and cinnamon for the crumble in a small bowl.
- Pour half of the batter into muffin tins, sprinkle with crumble, add the remaining batter, and top with more crumble.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool slightly before transferring to a wire rack.
