- 2 cups graham cracker crumbs
- 1 cup sweetened shredded coconut
- 1/2 cup powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup rum (or rum extract)
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1 cup additional shredded coconut for topping
Instructions
- In a large bowl, mix together graham cracker crumbs, shredded coconut, powdered sugar, and cocoa powder.
- Add in the melted butter, rum, and vanilla extract; mix until fully combined.
- Press the mixture firmly into a greased 8×8 inch baking dish.
- Sprinkle the top with additional shredded coconut and press down slightly.
- Refrigerate for at least 2 hours before cutting into squares.

Notes
For a non-alcoholic version, use rum extract instead of real rum. Keep them stored in an airtight container in the refrigerator for up to a week.
