Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup coconut cream
  • 1/2 cup shredded coconut
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt to create the dry blend.
  2. In another bowl, combine the milk, melted butter, egg, and vanilla extract. Whisk until well-blended.
  3. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  4. Heat oil in a deep fryer until hot enough for frying.
  5. Using a piping bag, pipe the donut batter into the hot oil in round shapes and fry until golden brown. Remove and drain on paper towels.
  6. Allow the donuts to cool completely before filling.
  7. In a separate bowl, mix together the coconut cream and shredded coconut until smooth.
  8. Once the donuts are cool, use a piping bag to fill each donut with the coconut cream mixture.
  9. Dust lightly with powdered sugar before serving.
