A delightful breakfast dish combining the light texture of cloud eggs with rich blue cheese and crispy bacon, perfect for brunch.

- 4 large eggs
- 50g crumbled blue cheese
- 2 slices of bacon, cooked and crumbled
- A pinch of sea salt
- Black pepper, to taste
- Fresh chives, for garnish (optional)
Instructions
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Carefully separate the egg whites from the yolks, keeping the yolks whole in separate bowls.
- Whisk the egg whites with a pinch of sea salt until stiff peaks form.
- Gently fold in the crumbled blue cheese and most of the crispy bacon into the whipped egg whites.
- Spoon the mixture onto the lined baking sheet in two equal mounds, creating a well in the center of each.
- Bake the egg whites for 3 minutes until lightly set.
- Carefully slide one yolk into each well of the baked egg whites.
- Return to the oven and bake for an additional 3-4 minutes, until the yolks are set but still runny.
- Top with reserved crumbled bacon, additional pepper, and fresh chives, then serve immediately.

Serve with buttery toast, fresh avocado, or a mixed green salad. Enjoy immediately for the best texture.
