Description

A vibrant and crunchy Mediterranean-inspired pasta salad that’s perfect for gatherings and can be customized with your favorite vegetables or proteins.


Ingredients

  • 8 ounces pasta (e.g., fusilli or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper. Taste and adjust seasoning.
  4. Pour the dressing over the pasta and veggie mixture. Toss gently to combine. Cover and refrigerate for at least 30 minutes before serving.

Notes

For best results, add dressing just before serving to maintain the vegetables’ crunch. Can be made ahead of time; lasts up to 3 days in the refrigerator.
