Description

Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup pitted olives, sliced
  • 2 tbsp capers, rinsed and drained
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain the pasta and set it aside while you prepare the sauce.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and optional red pepper flakes, sautéing for about 1 minute.
  3. Stir in the diced tomatoes, sliced olives, and capers. Bring the mixture to a gentle simmer and let it cook for about 5-7 minutes.
  4. Season with salt and pepper to taste. Toss the cooked spaghetti with the sauce until well coated. Serve hot, garnished with fresh parsley or basil.

Notes

For variation, add sautéed red peppers, spinach, or shrimp. Store leftovers in an airtight container for up to 3 days.
