- 1.5 lbs ground beef (80/20 blend)
- 0.5 lbs ground pork
- 1 cup breadcrumbs
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 0.5 cup whole milk
- 1/3 cup ketchup
- 2 tbsp Worcestershire sauce
- 2 tsp Dijon mustard
- 1.5 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 0.5 cup ketchup (for glaze)
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard (for glaze)
- 1 tbsp apple cider vinegar
- 2.5 lbs russet potatoes, peeled and cut into chunks
- 0.5 cup whole milk, warmed
- 1/4 cup unsalted butter
- 0.5 cup sour cream
- 1.5 tsp salt (for mashed potatoes)
- 0.5 tsp black pepper (for mashed potatoes)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, eggs, milk, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, and dried thyme. Mix until just combined.
- Shape the mixture into a loaf shape on the prepared baking sheet or transfer it into the loaf pan. In a small bowl, whisk together the ketchup, brown sugar, Dijon mustard, and apple cider vinegar. Spread half the glaze over the meatloaf. Bake for 40 minutes, then spread the remaining glaze and bake for an additional 20-25 minutes.
- While the meatloaf bakes, place the potatoes in a pot, cover with water, and add 1 teaspoon of salt. Boil and simmer the potatoes until tender, about 18-20 minutes. Drain, return to the pot, and add warmed milk, butter, sour cream, and seasonings. Mash until smooth.
- Let the meatloaf rest for 10 minutes before slicing. Serve it with the mashed potatoes.
Notes
For ultra-creamy mashed potatoes, do not skimp on the butter and cream. Adjust seasoning to taste.
