- 1/2 cup powdered sugar
- 1/4 cup cornstarch
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a bowl, mix flour, powdered sugar, cornstarch, and softened butter until crumbly. Press firmly into the bottom of the prepared baking dish.
- Bake the crust for 15-20 minutes until lightly golden.
- In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon mixture evenly over the baked crust.
- Bake for an additional 20-25 minutes until the filling is set.
- Allow to cool completely, dust with powdered sugar, and cut into bars.
Notes
For best results, use fresh lemons and allow time for cooling. Store in an airtight container in the refrigerator for up to 5 days.
