- 3 cups diced apples
- 2 cups granulated sugar
- 3 cups all-purpose flour
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 baking pan.
- Peel and dice the apples, toss them with 1 tablespoon of sugar and 1 teaspoon of cinnamon.
- In a large bowl, whisk together sugar, vegetable oil, eggs, and vanilla extract.
- In another bowl, stir together flour, baking soda, baking powder, and salt.
- Add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the diced apples evenly.
- Pour the batter into the prepared pan, sprinkle with cinnamon sugar.
- Bake for 45–50 minutes or until a toothpick comes out clean.
- Let cool slightly before serving.
Notes
Serve warm with vanilla ice cream or with coffee/tea. Store leftovers in an airtight container or freeze for longer storage.
