Ingredients

- 1 prime rib roast (about 4–6 pounds)
- Salt
- Black pepper
- Garlic powder
- Fresh rosemary
- Fresh thyme
- Olive oil
- Beef stock
- Red wine (optional)
Instructions
- Preheat your oven to 450°F (232°C).
- In a bowl, mix together salt, black pepper, garlic powder, chopped rosemary, and thyme.
- Rub the prime rib roast with olive oil and coat it generously with the seasoning mix. Place the roast bone side down on a rack in a roasting pan. Roast in the oven for 15 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue cooking for about 2 to 2.5 hours, or until the internal temperature reaches 130°F (54°C) for rare.
- Remove the roast from the oven and tent with aluminum foil. Allow it to rest for at least 20 minutes before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat by slicing and warming gently in the oven or microwave with a splash of beef stock.
