- 2 heads romaine lettuce, chopped
- 2 grilled chicken breasts, sliced
- 1 cup croutons
- 1/2 cup freshly grated parmesan cheese
- 1/2 teaspoon black pepper
- 1/3 cup Caesar dressing
Instructions
- Season chicken breasts with olive oil, salt, pepper, and garlic powder. Grill for 5–7 minutes per side until cooked through, then let rest before slicing.
- If making homemade dressing, whisk mayonnaise, lemon juice, Dijon mustard, anchovy paste, minced garlic, Worcestershire sauce, and parmesan cheese. Chill until ready to use.
- Rinse and dry the romaine lettuce. Chop into bite-sized pieces and place in a salad bowl.
- Add sliced grilled chicken, croutons, parmesan cheese, and Caesar dressing. Toss gently and serve immediately, garnished with extra parmesan and black pepper.
Notes
For best results, keep the dressing separate until serving to prevent wilting. Great for lunch or dinner, and pairs well with a crusty baguette.
