A delightful loaf combining ripe bananas and sweet cinnamon, perfect for breakfast, snacks, or dessert.

- 4 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 beaten egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mix the melted butter with the mashed bananas until smooth.
- Stir in baking soda and a pinch of salt, then mix in sugar, beaten egg, and vanilla extract, followed by the flour.
- In a small bowl, combine cinnamon and brown sugar for the swirl topping.
- Pour half of the banana batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture, then top with the remaining batter and finish with the rest of the cinnamon-sugar mixture.
- Gently swirl the batter with a knife and bake for 60-65 minutes or until a toothpick comes out clean. Cool slightly before transferring to a wire rack.
Notes
Serve warm or at room temperature. Great with butter, cream cheese, or as a dessert with whipped cream or ice cream.
