Ingredients

  • 1 cup protein powder
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the glaze: 1/2 cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix together the almond flour, protein powder, coconut sugar, baking soda, cinnamon, and salt in a large bowl.
  3. Whisk together the applesauce, almond milk, eggs, and vanilla extract in another bowl until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Allow the muffins to cool slightly, then whisk together the powdered sugar and milk to create the glaze and drizzle it over the muffins.

Notes

For added moisture, consider using Greek yogurt instead of applesauce. You can also add ingredients like chocolate chips or nuts for variations.
