Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine flour, baking powder, salt, sugar, and cinnamon.
  3. In another bowl, whisk together milk, melted butter, eggs, and vanilla.
  4. Mix the wet and dry ingredients until just combined.
  5. In a small bowl, mix brown sugar and cinnamon.
  6. Fill muffin cups halfway with batter, sprinkle with cinnamon sugar, then top with more batter.
  7. Swirl the batter with a toothpick for a marble effect.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool for a few minutes before transferring to a wire rack.

Notes

Best served warm with a simple glaze of powdered sugar and milk. Store in an airtight container at room temperature for up to 2 days.
