  • 1/2 cup granulated sugar

  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar (for filling)
  • 1 tablespoon cinnamon (for filling)
  • 1 tablespoon powdered sugar (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Add the egg and vanilla extract to the butter mixture and blend until combined.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.
  6. In a small bowl, mix the brown sugar and cinnamon for the filling.
  7. Scoop about 1 tablespoon of dough, flatten it, place a teaspoon of the cinnamon-sugar mixture in the center, fold to seal, and roll into a ball.
  8. Place on the baking sheet and bake for 10-12 minutes until edges are lightly golden.
  9. Drizzle powdered sugar mixed with a little milk over cookies after they cool slightly.
