Ingredients

  • 150g active sourdough starter
  • 250g filtered water
  • 28g honey
  • 500g unbleached flour
  • 10g sea salt
  • 2 tablespoons brown sugar (for filling)
  • 1 tablespoon cinnamon (for filling)
  • 4 tablespoons unsalted butter (plus 1 tablespoon for brushing)

Instructions

  1. Combine the sourdough starter, water, and honey in a stand mixer bowl and whisk until blended.
  2. Add flour and sea salt to the mixture; mix until a dough forms.
  3. Knead the dough until it is smooth and elastic, about 5-7 minutes.
  4. Cover the dough and let it rise in a warm place for 8-12 hours, until doubled in size.
  5. Divide the dough into eight equal pieces and shape each into a log filled with a mixture of brown sugar and cinnamon.
  6. Allow the shaped bagels to rise for another 30 minutes.
  7. Bring a pot of water to boil, add a bit of sugar, and boil the bagels for 1 minute per side.
  8. Preheat the oven to 425°F (218°C), place the boiled bagels on a parchment-lined baking sheet, and bake for 20-25 minutes or until golden brown.
