Description

Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, ground cinnamon, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  3. Gradually add the dry mixture into the wet ingredients, stirring until just combined.
  4. Using a tablespoon or cookie scoop, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden but the centers remain slightly soft. Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use freshly grated cinnamon. Customize with chocolate chips or nuts if desired.
