- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, ground cinnamon, and salt. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry mixture into the wet ingredients, stirring until just combined.
- Using a tablespoon or cookie scoop, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes or until the edges are golden but the centers remain slightly soft. Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, use freshly grated cinnamon. Customize with chocolate chips or nuts if desired.
