Delightful Christmas Cherry Cheesecake Bars with a creamy cheesecake filling and sweet cherry topping, perfect for holiday gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 can cherry pie filling
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan to prevent the bars from sticking.
  2. In a bowl, mix together the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of the prepared pan to form a solid crust.
  3. In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla, then mix until everything is well blended. Add the eggs, one at a time, and mix on low speed until just combined. Pour the cream cheese mixture over the crust, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the center is set and no longer jiggles.
  4. Remove the bars from the oven and allow them to cool completely at room temperature. Once cooled, spread the cherry pie filling evenly over the top. Chill in the refrigerator for at least 2 hours before serving. For an extra touch, serve with a dollop of whipped cream on top.
