Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix grated zucchini, vegetable oil, sugar, brown sugar, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet ingredients until just mixed. Fold in chocolate chips if desired.
  5. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Choose medium-sized zucchini and avoid overmixing for a lighter texture. Can be stored for up to 3 days at room temperature or frozen for up to 3 months.
