Ingredients

  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup chocolate ganache or jam for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes. Add vanilla and mix well.
  3. In another bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually sift into the wet mixture, stirring until combined.
  4. Roll dough into 1-inch balls and place on the baking sheet, creating an indentation in each ball with your thumb.
  5. Bake for 10-12 minutes until edges are firm. Fill thumbprint indents with filling while warm.
  6. Allow cookies to cool on the baking sheet before transferring to a wire rack.
