Description

Ingredients

  • 1 cup (240ml) whole milk, warmed to about 100°F (38°C)
  • 6 Tablespoons (75g) granulated sugar, divided
  • 1 Tablespoon (9g) active dry or instant yeast
  • 5 Tablespoons (71g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 teaspoon salt
  • 4 cups (530g) bread flour, plus more as needed
  • 6 Tablespoons (85g) unsalted butter, softened
  • 1/2 cup (100g) packed light or dark brown sugar
  • 2 Tablespoons (10g) unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (135g) semi-sweet chocolate chips
  • 3 Tablespoons (45ml) heavy cream
  • 1 teaspoon espresso powder
  • 1 and 1/2 cups (180g) confectioners’ sugar, sifted
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Whisk warm milk with 2 tablespoons of sugar and yeast; let it foam for 5 minutes.
  2. Add the remaining sugar, melted butter, eggs, salt, and 1 cup of flour; beat for 1 minute on medium speed.
  3. Gradually mix in the remaining 3 cups of flour until a soft dough forms; knead until smooth and elastic.
  4. Let the dough rise in a greased bowl, covered, until it has doubled in size, about 2 hours.
  5. Roll out the dough on a floured surface into a large rectangle.
  6. Spread the filling mixture of softened butter, brown sugar, cocoa powder, cinnamon, and vanilla over the dough, sprinkling with chocolate chips.
  7. Roll the dough tightly into a log and cut into 12 equal pieces; place in a greased baking dish and let rise for 1 hour.
  8. Preheat the oven to 350°F (175°C) and bake for 25-28 minutes until golden brown.
  9. Mix warm cream with espresso powder and confectioners’ sugar for the icing.
  10. Drizzle the icing over the warm rolls before serving.

Notes

For a gooey experience, serve warm and consider pairing with coffee or hot chocolate.
