- 1 cup dark chocolate chips
- 1/4 cup cocoa powder
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Pinch of salt

Instructions
- In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring until smooth.
- In a separate mixing bowl, combine ricotta cheese, cocoa powder, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth.
- Stir the melted chocolate into the ricotta mixture until well combined.
- Chill the mixture in the refrigerator for about 30 minutes.
- Use a spoon to scoop and roll the mixture into balls.
- Roll each truffle in cocoa powder or your choice of toppings.
- Place the truffles on a parchment-lined baking sheet and refrigerate for another 15 minutes until firm.
- Serve chilled and enjoy!
