Ingredients

  • 1 cup ricotta cheese
  • 1 cup dark chocolate chips
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: crushed nuts, sprinkles, or coconut

Instructions

  1. In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring until smooth.
  2. In a separate mixing bowl, combine ricotta cheese, cocoa powder, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth.
  3. Stir the melted chocolate into the ricotta mixture until well combined.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Use a spoon to scoop and roll the mixture into balls.
  6. Roll each truffle in cocoa powder or your choice of toppings.
  7. Place the truffles on a parchment-lined baking sheet and refrigerate for another 15 minutes until firm.
