Description

Delicious and healthy chocolate muffins packed with protein, perfect for breakfast, snacks, or post-workout fuel.


Ingredients

  • 1 cup oat flour
  • 1/2 cup chocolate protein powder
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the oat flour, chocolate protein powder, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), applesauce, eggs, milk, and vanilla extract until well combined.
  4. Slowly add the wet ingredients to the dry ingredients and stir until just combined. If desired, fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For variations, you can use ripe bananas instead of applesauce, add nuts or seeds for extra crunch, or use flax eggs for a vegan version.
