Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and mashed potatoes.
- Sift the flour, cocoa powder, baking powder, baking soda, and salt together. Gradually add to the potato mixture.
