Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together all-purpose flour, cocoa powder, baking soda, salt, ground ginger, and ground cinnamon.
  3. Cream together softened butter and brown sugar until light and fluffy. Beat in egg, molasses, and vanilla extract.
  4. Gradually mix dry ingredients into the wet mixture until combined. Optionally fold in chopped chocolate or chocolate chips.
  5. Roll the dough into 1-inch balls, roll in sugar, and place on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until edges are set. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
