Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together all-purpose flour, cocoa powder, baking soda, salt, ground ginger, and ground cinnamon.
- Cream together softened butter and brown sugar until light and fluffy. Beat in egg, molasses, and vanilla extract.
- Gradually mix dry ingredients into the wet mixture until combined. Optionally fold in chopped chocolate or chocolate chips.
- Roll the dough into 1-inch balls, roll in sugar, and place on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are set. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
