Ingredients

  • 1 cup unsalted butter
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup toffee bits
  • 1 cup semisweet chocolate chips
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until fluffy. Add the vanilla extract and mix well.
  3. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the creamed mixture, mixing until just combined. Stir in toffee bits.
  4. Drop tablespoon-sized balls onto prepared baking sheets. Bake for 10-12 minutes or until edges are golden.
  5. Let cookies cool briefly on baking sheets, then transfer to a wire rack. Melt chocolate chips and vegetable oil together. Dip half of each cookie in the chocolate and let excess drip off. Place on parchment paper to set.

Notes

Store in an airtight container at room temperature for up to one week. For longer storage, freeze for up to three months.
