Chocolate Covered Strawberry Cupcakes

Description

Delicious cupcakes combining rich chocolate and fresh strawberries, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
  • 1 cup chopped strawberries
  • 1 cup chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Add the softened butter, eggs, vanilla extract, and milk to the dry ingredients. Mix until the batter is smooth, avoiding over-mixing.
  4. Gently fold in the chopped strawberries and chocolate chips.
  5. Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
  6. Bake in the preheated oven for 18-20 minutes. Check for doneness with a toothpick.
  7. Allow the cupcakes to cool completely in the pan before transferring to a wire rack.
  8. Meanwhile, heat the heavy cream until just simmering, then add the chocolate chips and stir until smooth.
  9. Dip the top of each cooled cupcake into the chocolate ganache.
  10. Place a fresh strawberry on top of each cupcake and allow the ganache to set before serving.

Notes

Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
