- 42g sourdough starter
- 350g water (divided)
- 10g salt
- 500g bread flour
- 113g unsalted butter
- 235g chocolate chips
Instructions
- Start by preparing the levain. In a small bowl, mix 42g of your sourdough starter with 42g of water and 42g of flour. Allow this mixture to rest at room temperature until it becomes bubbly and active, typically around 1-2 hours.
- Once your levain is ready, combine it with the remaining water and salt in a large mixing bowl. Gradually add the bread flour, mixing it in until the dough comes together. Knead this mixture on a floured surface for about 10 minutes until it achieves a smooth and elastic texture.
- Roll your dough into a rectangle about 1/2 inch thick. Spread your softened butter over two-thirds of the surface. Fold the unbuttered third over the middle, then fold the final third over that. This folding technique creates delicious layers that will turn your bread flaky.
- Roll the dough out again into a rectangle. Evenly sprinkle the chocolate chips on the two-thirds of the dough that is still exposed, similar to how you added the butter. Fold it again, sealing the chocolate chips inside as you would with a turnover.
- Shape the dough into a loaf by rolling it tightly and pinching the seams closed. Place it in a greased loaf pan and cover it with a kitchen towel. Let it rise until it has doubled in size, which should take about 1 to 2 hours depending on room temperature.
- Preheat your oven to 375°F (190°C). Once heated, bake the loaf for about 40 minutes, or until it has turned a beautiful golden brown and sounds hollow when tapped on the bottom.
