Ingredients

  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, combine melted butter, eggs, milk, and vanilla extract, whisking until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the chocolate chips evenly without overmixing.
  6. Divide the batter among muffin cups, filling each about three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a delicious twist, add nuts or dried fruit to the batter. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
