Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1/4 cup flour
  • 1/4 cup cornstarch
  • 2 eggs, beaten
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a bowl, combine the flour and cornstarch. Dip chicken pieces into the beaten eggs, then roll in the flour mixture.
  2. Heat vegetable oil in a skillet over medium heat. Add chicken in a single layer and cook until golden brown, about 5-7 minutes.
  3. Remove chicken and set aside. In the same skillet, sauté minced garlic and ginger for about a minute.
  4. Mix chicken broth, lemon juice, sugar, and soy sauce, then pour into the skillet and bring to a simmer.
  5. Add chicken back into the skillet, stirring to coat in the sauce and let cook for a few more minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions and serve warm over rice or with steamed veggies.

Notes

For extra crispiness, consider double-frying the chicken. Use honey or a sugar alternative for a different sweetness profile.
