- 1 lb chicken breast, cut into bite-sized pieces
- 1/4 cup flour
- 1/4 cup cornstarch
- 2 eggs, beaten
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup sugar
- 1 tablespoon soy sauce
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a bowl, combine the flour and cornstarch. Dip chicken pieces into the beaten eggs, then roll in the flour mixture.
- Heat vegetable oil in a skillet over medium heat. Add chicken in a single layer and cook until golden brown, about 5-7 minutes.
- Remove chicken and set aside. In the same skillet, sauté minced garlic and ginger for about a minute.
- Mix chicken broth, lemon juice, sugar, and soy sauce, then pour into the skillet and bring to a simmer.
- Add chicken back into the skillet, stirring to coat in the sauce and let cook for a few more minutes.
- Season with salt and pepper to taste.
- Garnish with chopped green onions and serve warm over rice or with steamed veggies.
Notes
For extra crispiness, consider double-frying the chicken. Use honey or a sugar alternative for a different sweetness profile.
