  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or skillet over medium-high heat. While the grill heats up, season the ribeye steaks generously with salt and pepper, ensuring that both sides are well-coated for flavor.
  2. In a mixing bowl, combine the chopped parsley, cilantro, olive oil, red wine vinegar, minced garlic, red pepper flakes, and a pinch of salt. Stir well until all the ingredients are combined into a vibrant green sauce.
  3. Once the grill is hot, place the seasoned steaks on it. Sear the steaks for about 4-5 minutes on each side for medium-rare doneness. If you prefer your steak cooked longer, adjust the time accordingly. You’ll know it’s done when a delicious crust forms on the outside.
  4. After cooking, remove the steaks from the heat and let them rest for a few minutes. This resting period allows the juices to redistribute throughout the meat, ensuring a juicy steak. Finally, serve the steaks drizzled with the chimichurri sauce on top.
