- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Taco shells
- Toppings: diced tomatoes, shredded lettuce, cheese, sour cream, cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic; sauté until the onion is soft and translucent.
- Add chicken breasts, chili powder, cumin, paprika, salt, and pepper to the skillet; cook until browned on all sides.
- Add a splash of water, cover, and simmer for 20-25 minutes or until cooked through and tender.
- Remove and shred the chicken using two forks, then return to the skillet to soak up the juices.
- Serve warm in taco shells, topped with your preferred fresh toppings.
