Description
A classic Italian dish combines tender chicken, vibrant pasta, and a rich, creamy sauce, perfect for cozy dinners or special occasions.
Ingredients
Scale
- 2 large boneless skinless chicken breasts
- 8 ounces uncooked fettuccine
- 4 ounces cream cheese (softened)
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 1/4 cup chicken broth
- 2 large cloves garlic (minced)
- 1 tablespoon olive oil
- 3 tablespoons butter (divided)
- Salt & pepper (to taste)
- Flour (for dredging)
Instructions
- Soften cream cheese at room temperature or microwave briefly until creamy. Meanwhile, cook fettuccine in salted water according to package directions until al dente, about 8-10 minutes. Drain and set aside.
- Season chicken breasts with salt and pepper, then dredge in flour, shaking off any excess. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Sauté the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest.
- Add 2 tablespoons of butter and minced garlic to the same skillet. Sauté for about 30 seconds until fragrant. Add softened cream cheese, heavy cream, and chicken broth. Stir continuously to combine, allowing the sauce to simmer and thicken for about 5-7 minutes.
- Stir in freshly grated parmesan cheese until melted and smooth. Add cooked fettuccine to the sauce, tossing until well-coated. Finally, slice the rested chicken and serve it over the fettuccine. Enjoy this creamy delight!
Notes
Serve hot, garnished with extra parmesan cheese and cracked black pepper. Pairs well with garlic bread and a green salad.
