- 2 cups cooked chicken, shredded
- 1 cup bell peppers, diced
- 1 cup ranch dressing
- 1 cup shredded cheese
- 4 large tortillas
- 1/2 cup black beans, drained and rinsed (optional)
- 1/2 cup corn (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the shredded chicken, diced bell peppers, ranch dressing, and cheese. Fold in black beans and corn if using, and season to taste.
- Lay out the tortillas and divide the filling evenly among them.
- Roll the tortillas tightly, folding in the sides as you go.
- Place seam side down in a baking dish, sprinkle additional cheese on top if desired. Bake at 350°F (175°C) for 10-15 minutes.
- Serve warm with optional sides like salsa or guacamole.
