Delightful burritos filled with shredded chicken, vibrant bell peppers, and creamy ranch dressing, perfect for weeknights or gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced
  • 1 cup ranch dressing
  • 1 cup shredded cheese
  • 4 large tortillas
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/2 cup corn (optional)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded chicken, diced bell peppers, ranch dressing, and cheese. Fold in black beans and corn if using, and season to taste.
  2. Lay out the tortillas and divide the filling evenly among them.
  3. Roll the tortillas tightly, folding in the sides as you go.
  4. Place seam side down in a baking dish, sprinkle additional cheese on top if desired. Bake at 350°F (175°C) for 10-15 minutes.
  5. Serve warm with optional sides like salsa or guacamole.
