Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice or pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, shredded cheddar cheese, cooked rice or pasta, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Transfer the mixture into a greased casserole dish, spreading it evenly.
  4. Sprinkle breadcrumbs over the top if desired, and bake for 25-30 minutes until bubbly.
  5. Let the casserole cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 3-4 days. You can freeze before baking and bake later.
