- 8 oz pasta (e.g., fettuccine or penne)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then add to the skillet. Cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove and let rest.
- In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for about 2 minutes until fragrant and tomatoes soften.
- Add spinach and cook until wilted. Slice the chicken and return it to the skillet. Add cooked pasta and Parmesan cheese, tossing until combined. Garnish with fresh basil, if desired, and serve warm.
