- 1 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup sour cream
- 2 cups pitted cherries
- 1/2 cup granulated sugar (for cherry filling)
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 beaten egg (optional, for brushing)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine flour, butter, sugar, and salt until crumbly. Add sour cream and mix until combined.
- Press the dough into the bottom of a greased baking pan.
- Mix cherries, sugar, cornstarch, and vanilla extract in another bowl. Spoon over the crust. Brush edges with beaten egg if desired.
- Bake for 30-35 minutes until filling bubbles and crust is golden brown.
- Allow to cool completely, then cut into squares and dust with powdered sugar if desired.
Notes
Use fresh cherries when in season for the best flavor. Adjust sugar in the cherry filling to taste. Consider adding rolled oats to the crust for texture.
