  • 2 large eggs
  • 1/2 cup buttermilk
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped maraschino cherries
  • Buttercream frosting (for topping)
  • Lime wedges (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, lime juice, and lime zest.
  3. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to the wet ingredients, mixing just until combined. Fold in chopped maraschino cherries.
  4. Divide the batter evenly between the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the cupcakes to cool completely in the pan before transferring to a wire rack. Frost with buttercream frosting and garnish with a lime wedge.

Notes

Use room temperature ingredients for a smoother batter. Do not overmix the batter for fluffier cupcakes.
