Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- Cream together the softened unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, lime juice, and lime zest.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to the wet ingredients, mixing just until combined. Fold in chopped maraschino cherries.
- Divide the batter evenly between the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely in the pan before transferring to a wire rack. Frost with buttercream frosting and garnish with a lime wedge.
Notes
Use room temperature ingredients for a smoother batter. Do not overmix the batter for fluffier cupcakes.
